Is it true that once potatoes start to sprout they should be discarded and are not safe to eat.  I know if they turn green they are not edible.

if the sprouts are very very small - 1//4" or less, I have cut them out and everything was ok. BUT  innocently, as a young bride, I cut them off when they were about 1" and paid the price with a terrible stomach ache.  Makes sense - the potato is a member of the nightshade family which is poisonous.  They can sprout quickly after purchase if conditions are right...so if they do sprout, throw them in the compost pile....depending on time of year, they may reward you with a batch of little spuds!  I've done that successfully.
